If I were to rename a dataset in the middle of the flow, is it possible?

There aren't any options that I can see. Is it likely, or unlikely?

Support for dataset renaming was added in 11.2 : https://doc.dataiku.com/dss/latest/release_notes/11.html#id26
You can now rename the dataset directly from the Action many under More Action - Rename Dataset
